From Cow to Cheese
The herd of Frisian-Holstein cows graze the pasture during early spring to late fall, to the satisfaction of the farmer, the cow and the consumer. The cows are milked twice daily and almost all the milk is processed into cheese. 10 Liter of milk guarantees one kilo of delicious farmer's cheese! Every day about 160 kilos of cheese are produced and are eagerly sold in the farm store on the farm, at fellow farm stores, cheese specialty stores, restaurants and regional markets. It all happens within a radius of 20 meters: the cows are milked in the barn, the cheese is produced in the dairy, it ripens in the warehouse and it is tasted and bought in the store. Everyone has his share; the cow, the farmer and the customer, the circle is complete!
Tasting farmer's cheese?
Farmer's cheese is raw milk cheese - that is - cheese made from unpasteurized milk. This method of production ensures that all the good flavor and aroma substances are not lost. Farmers' cheese is therefore more pronounced in taste and spicier than factory-made cheese. Farmer's cheese is a traditionally protected product and the taste of farmer's cheese differs per farm and per area. Region-specific cheese can be taken quite literally; farmer's cheese from the peatlands tastes different from cheese from the sandy soils. After all, each area has a different "grass menu" for its cows and you can taste that in the cheese. During a tour and demonstration you really get to know everything, very informative and always including a tasting!
Tough to the cheese farmer!
Watching cows and cow art, experiencing a cheese making demonstration, asking questions to the cheese farmer, it is all possible at Heileuver.
